SPAGHETTI WITH PRAWNS AND CAPERS

Serves 4

Ingredients

  • 1 tbs olive oil
  • olive oil spray
  • 3 cloves garlic, peeled and finely chopped
  • 600g peeled tomatoes
  • 3 tsp dried basil
  • 400g uncooked spaghetti
  • 340g frozen peeled prawns
  • 6 tbs capers, rinsed, dried, chopped
  • salt
  • pepper

Method

Heat the oil in a frying pan and toss the garlic in it over a high heat for 30 seconds to flavour the oil. Pour in the tomatoes, stir in the basil and bring to the boil. Reduce the heat and simmer, uncovered for 15 minutes to thicken the sauce.

Cook the spaghetti.

Stir the prawns and capers into the sauce and heat for 5 minutes.

Pour sauce on the drained spaghetti.
