INGREDIENTS
- 250g mushrooms, sliced
- 150g ricotta
- 25g Parmesan cheese, grated
- 2 onions, medium size, chopped finely
- ½ lemon juice
- salt
- pepper
METHOD
Place the mushrooms in an ovenproof dish. Mix together the ricotta, the Parmesan cheese, the onions, the lemon juice, salt and pepper and place the mixture over the mushrooms. Place in oven – 190oC/ 375oF/ Gas 5 for 30 minutes.
